30 Minute Muffins

Need a quick snack to be ready in a hurry?  Keep a few bags of mix on hand, some staple ingredients and a few add ins and you will have family pleasing muffins in half an hour.  
Peanut Butter Chocolate Chip Muffins

Turn a plain muffin into to a special treat with the addition of peanut butter chips and chocolate chips.  Two great tastes that taste great together.

Ingredients
  • 1 package Bob's Red Mill GF Muffin Mix
  • ½ cup vegetable oil or melted butter
  • 1 cup milk
  • 2 eggs lightly beaten
  • ¾ cup Hershey's GF Chocolate Chips
  • ¾ cup Hershey's GF Peanut Butter Chips
Instructions
  1. Preheat oven to 200°C (400°F).  Line tray with muffin cups. 

  2. Pour muffin mix into a mixing bowl. Make a well in the center and add oil or butter, milk and eggs. Mix until well combined. Stir in chocolate chips and peanut butter chips.

  3. Spoon batter into muffin cups, filling each cup ¾ full.  

  4. Bake until muffins are golden brown, about 22-25 minutes.  Move to wire rack to cool completely.  

Hershey’s has begun labeling their baking chips as gluten free.  The packages in the photo were purchased at Mustafa (level 2, baking supplies).  As always, as ingredients and manufacturing vary between counties, please be sure to check for potential ingredient changes or cross contamination in facilities.
