Rainbow Cake

Everyone should have a gluten-free rainbow cake for their birthday.


This recipe is easy-peasy, insanely pretty once done, and a great project for kids to help out with.  What are you waiting for? Get out your favorite cake mix,  and get baking!   The recipe is also stated below for those who prefer to have a reference.

  • 1 or 2 boxes of GF yellow cake (plus ingredients required on box)
  • Colored food gels/dye
Frosting (if desired):
  • White royal icing (powdered sugar, egg whites, lemon juice)
  • Colored sugar (powdered sugar,water, food dye/gel)
  1. Make your favorite gluten-free cake mix.

  2. After you mix up your batter according to the package instructions, divide it into several smaller bowls (depending on how many colors you want for your cake).
  3. Color each bowl batter with a few drops of gel food dye & stir well to mix in.
  4. Gently pour the first colored batter into a floured cake pan.

  5. Spoon the second colored batter on top of the first layer.

  6. Do the same for the other colored batters until all are in the cake pan.

  7. Gently place it in the oven and bake according to the mix instructions.
  8. Once done, invert the pan and let cool on a wire rack (until room temperature).

  9. If you are happy with the colors of the unfrosted cake, you are all done. Otherwise, frost the cake and continue decorating.
  10. You can also add more colors or put the batter in different places for a random marbled look.
Recipe Notes

I used a bundt pan, but the shape does not really matter. If you would like to make a traditional shaped round cake, that is fine too.

Whatever shape and size you choose, be sure to adjust your baking time accordingly. Don’t worry about getting the batter evenly spread in on each layer, they will bake as they please.
